Best Banana Bread Ever!

A couple of nights ago I had trouble sleeping so I spent some time browsing through my "must try" recipes.  I wanted to try something with bananas as I had a brown bunch of them sitting on my counter. Spunky Coconut didn't let me down with the brownies and she didn't let me down with her banana bread recipe.  It is the moistest, softest banana bread ever..thank you Spunky Coconut!  However, considering the time of night (I didn't want to make a run to the store in my pjs) I had to make a few changes to her recipe- I took out the various flours she used and subbed in almond meal, I got rid of the liquid stevia and used a splash of vanilla extract instead, took out the honey and used agave nectar and instead of coconut oil, I used apple sauce.

The Best Banana Bread Ever!


2 ripe bananas (medium to large) mashed
4 beaten eggs
1/4 cup agave nectar
3 tbs unsweetened apple sauce
splash of vanilla extract
1/2 tsp salt
1 tsp cinnamon
3/4 cup of almond meal
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup chopped walnuts

When I mixed the batter together I found it to be very liquidy. I was really worried that it wouldn't set, but it did!  I baked it in a loaf pan covered with parchment paper for 30-40 minutes at 350 degrees. Depending on your oven you may have to adjust the time.  Remember to bake the cake on the top rack to prevent burning the batter (almond meal browns very quickly).
